Winemaking notes: 100% Chenin Blanc, sustainably-farmed, grown on a south-facing vineyards with sandstone shale, hand-harvested in the two or more passes in the vineyard and aged in the lees in 400-liter French oak barrels, with partial malolactic conversion, for eleven months.
Tasting note: the ‘Clos du Papillon’ is deep lemon in color with a clean nose of medium+ intensity with aromas of beeswax, cotton, citronella, lemon, marzipan, quince and orange zest. On the palate this wine is dry with high acid, high alcohol, medium body, pronounced flavor intensity and a medium finish with flavors of lilac, orange blossom, lime zest, quince, marmalade, tangerine, satsuma, ginger, honeycomb, and lanolin. Drink now through 2030, this wine is very good: 9.3/10.
