Winemaking notes: 100% Cinsault grown on a pebbly soil. The grapes are de-stemmed and fermented on the skins for three weeks and bottles in the late winter after five months of aging in tank.
Tasting note: this wine is medium ruby in color with a clean nose of medium intensity with aromas of lavender, dark red cherry, licorice, anise, rosemary and white pepper. On the palate this wine is dry with medium acid, medium tannin, high alcohol, medium body, medium+ flavor intensity and a medium+ finish with flavors of lavender, red plum, boysenberry, dark cherry, pink peppercorn, rosemary and black tea leaves. Drink now, this wine is very good: 9.0/10. This is super juicy and has some nice nice fruit and structure to show what Cinsault can do outside of the usual rosé or red blend context.
