Winemaking notes: 100% Pinot Noir “Cold pre-fermentation maceration lasts 5 to 6 days. The alcoholic fermentation lasts about fifteen days, with two daily pumping overs, without punching down to avoid extracting excessive tannins.The must is then gently pressed using a pneumatic press.The aging lasts between 10 and 12 months in barrels, with a maximum of 15% new barrels.”
Tasting note: the Côte Chalonnaise Pinot Noir is medium ruby in color with a clean nose of medium intensity with aromas with cherry, wax, rose petals, orange peel and a touch of smoke. On the palate this wine is dry with medium+ acid, medium+ tannin, medium alcohol, medium-minus body, medium flavor intensity and a medium finish with flavors of rose hip, tart cherry, orange peel, clove, pepper and fennel.
