Winemaking notes: 100% Chardonnay from the Vau de Vey vineyard on the left bank of the Serein River. The Vau de Vey is a steep hillside rich in kimmeridgian limestone and faces southeast, and is considered one of the cooler climate premier cru vineyards.
Tasting note: the Chablis premier cru is medium gold in color with a clean nose of medium+ intensity with aromas of acacia, jasmine, lemon balm, lemon, ponderosa, tangerine, chalk, saline, sea spray, cheese, and mint. On the palate this wine is dry with medium+ acid, medium alcohol, medium body, medium+ flavor intensity and a medium finish with flavors of acacia, kaffir, lime zest, lemon, cream, chalk, saline and mint.
