Winemaking notes: 100% Persan grown on gravelly limestone and clay soils with a topsoil of sandstone and silt. The grapes are fermented on the skins for two weeks and the wine ages in tank on the fine lees.
Tasting note: the Persan is deep garnet with a clean nose of medium+ intensity with aromas of rose, pomegranate, red cherry, hazelnut, marzipan, cedar, sandalwood, graphite, pencil shavings and sage brush. On the palate this when is dry with high acid, medium tannin, medium alcohol, medium body, medium+ flavor intensity and a medium+ finish with flavors of rose hip, violet, raspberry, pomegranate, sour cherry, green tea, cedar, fresh tobacco leaf, anise, and sage. Drink now, this wine is very good: 9.2/10. The fruit here is a little sour and tangy with a brilliant acidity, this wine would be fascinating to age for another 10 years.
