Winemaking notes: 50% Syrah, 35% Grenache Noir, 10% Carignan & 5% Cinsault. “The fruit is sourced from Jean-Claude’s holdings in two of the Languedoc’s most up-and-coming terroirs—Cabrières and Terrasses du Larzac. These appellations are tucked away in the mountains at over 1000 feet above sea level, giving the wines an uncharacteristic freshness for the region.” The must is fermented in a combination of tank and barrel.
Tasting note: the Languedoc Cabrières is medium garnet in color with a clean nose of medium-minus intensity with aromas of violet, blackberry, cranberry, licorice, anise and sage. On the palate this wine is dry with medium acid, medium tannin, high alcohol, medium-minus body, medium-minus flavor intensity and a medium finish with flavors of violet, lavender, blackberry, red plum, licorice, anise, smoke, leather, clay and garrigue. Drink now, this wine is good: 8.6/10. This wine, despite the hype from KL, was a bit shy and didn’t have a lot of intensity and finish.
