Winemaking notes: 50% Chardonnay & 50% Pinot Noir from mostly Grand Cru vineyards in Montagne de Reims, a’Bouzy and Ambonnay. The wine aged on the lees for 7+ years and was finished with a dosage of 9g/L.
Tasting note: the Champagne is medium gold in color with a clean nose of pronounced intensity with aromas of lilac, honeysuckle, hawthorn, hibiscus, red apple, lemon, almond paste, cream, cider and lemon verbena. On the palate this wine is dry with high acid, medium alcohol, medium+ body, pronounced flavor intensity and a medium+ finish with flavors of lemon blossom, hawthorn, lemon, pink grapefruit, apricot, pink apple, Anjou pear, baked apple, kirsch, white tea, hazelnut, almond skin, wet stones, thyme and Thai basil leaf. Drink now, this wine is outstanding: 9.7/10.
