Winemaking notes: 74% Syrah & 26% Grenache Noir, organically-grown, from 50-year-old vines on average, grown on alluvial and schist soils. The wine is fermented in tank with a cold soak and on the skins for 30 days before aging for twelve months in concrete tank and French demi-muids.
Tasting note: the Côtes du Roussillon is deep garnet in color with a clean nose of pronounced intensity with aroma of Turkish fig, date, tar, leather, tobacco, bramble, white pepper, clove and fresh sage. On the palate this wine is dry with medium acid, medium tannin, high alcohol, medium body, medium+ flavor intensity and a medium+ finish with flavors or lavender, créme de mûre, black currant, fig, dried date, palm date, earth, leather, tobacco, smoke, tar, anise, pink peppercorn and herbs de Provence.
