Winemaking notes: “80% Grenache, 6% Syrah, 4% Mourvèdre, 10% other authorized varietals (Counoise, Cinsault, Vaccarèse, etc), Vines average 60+ years in age! Yields of 2 tons/acre, whole grape bunches are lightly crushed and fermented with wild yeasts for 5-7 days in traditional cement vats. This is followed by a further maceration period of 7-14 days, with1-2 pump-overs per day. The press and free run juice are then aged in 5,000 liter oak foudres for 24 months, and then blended and bottled without filtration.”

Tasting note: the Pégau is medium garnet in color with a nose of medium+ intensity with aromas of lavender, sous bois, raspberry, licorice, anise, garrigue, white pepper and a hint of horse sweat. On the palate this wine is dry with medium+ acid, medium tannin, medium body, high alcohol, medium+ flavor institute and a long finish with flavors of violet, lavender, roasted meat, duck fat, raspberry, boysenberry, clove, anise, tobacco and smoke. Drink now through 2031, this wine is outstanding: 9.7/10.
