Winemaking notes: this 5th growth in Pauillac consists of 30 hectares. For the grand vin, they use 75% Cabernet Sauvignon and 25% Merlot, vines on average 35 years of age, fermented on the skins for around 24 days, and age the wine is 40% new French oak barrels for 16 months. The property is currently seeking organic and biodynamic approval.
Tasting note: the 2000 Pauillac is deep garnet in color with a clean nose of medium intensity with aromas of red currant, green pepper, tobacco, leather and graphite. On the palate this wine is dry with medium acid, medium+ tannin, medium body, medium alcohol, medium+ flavor intensity and a medium+ finish with flavors of rosehip, carnation, caramel, wood spice, red currant, red licorice, tobacco, sage leaf and dried thyme. Drink now or through 2029, this wine is very good: 9.4/10.
