Winemaking notes: 100% Chardonnay from a 1.6ha parcel on the upper part of the slope with vines average 50 years of age. “The juice ferments very slowly at low temperature in stainless steel tanks, and after a first racking, the wine rests in tanks to develop on its lees.” Fermented with natural yeast, and certified organic.
Tasting note: the Vaucopin is pale gold in color with a clean nose of medium intensity with aromas of lemon, curd, lilac, yellow apple, and apple mint. On the palate this wine is dry with medium+ acidity, medium alcohol, medium body, medium+ flavor intensity and a medium finish with flavors or jasmine, lemon, nectarine, cream, brine, and mint leaves. Drink now, this wine is good, although a bit simple for a premier cru Chablis: 8.8.
