Winemaking notes: 100% Sauvignon Blanc from the Mentor-Salon villages of Morogues and Humbligny on Kimmeridgien marls. “The grapes are machine-picked, pressed into a pneumatic press after a 12 hour skin-contact maceration. The grape juices are fermented traditionally in tanks for 7-15 days. The newly-made wine is aged on its fine lees in stainless steel tanks for six months. It is then blended and bottled in the spring following the harvest.”
Tasting note: the Menetou-Salon is pale gold in color with a clean nose of pronounced intensity with aromas of lilac, elderflower, chalk, saline, petrichor, lemon, lycee, white peach, lemongrass and tarragon leaf. On the palate this wine is dry with medium+ acid, medium alcohol, medium+ body, medium+ flavor intensity and a long finish with flavors of elderflower, kafir lime, white peach, lycee blossom, apricot, Saturn peach, and lemongrass.
